Description
Nestled in the Carcassonnais, the Domaine de Cazaban is part of the Cabardès appellation, one of the westernmost in the Languedoc. Already far from the Mediterranean, but not yet in the Black Mountain.
Our organic and biodynamic wines express much more than a country, they tell an adventure, those of people who have chosen this unusual terroir to dive their new roots.
Above all, our approach is on a case-by-case basis. There is no room for dogmatism either in the vineyards or during winemaking. Observation and adaptation... before anything else.
As for the vines, we are convinced that it is essential that they are endowed with a healthy and solid "immune system"... as for human beings. It is because they will be strong, that our vines will withstand unfavorable climatic conditions. We strengthen this immunity by a choice adapted grape varieties to soil soil and geology, as well as by amendments made from organic and biodynamic organic matter, respectful of the environment, the soil and the vine.
