Description

For several years, we have been promoting the creation of ecosystems in our vines. In 2015, we started planting bluegrass with clover or a few flowers to completely grass our first vines.
We realized over time that other species were appearing. Instead of trying to destroy them and favor those we had installed, we chose to let nature take its place and simply maintain our vines as little as possible to be able to work them in good conditions.
Today, there are dozens of plants as varied as possible that we find in the middle of our vines. This ranges from nettle and thistle, to clover, mint, or wild strawberries. Each plant has its uses: some attract pollinating insects or which regulate other populations at risk for our vines, some will loosen the soil with deep roots and will promote the infiltration of rain into the soil, others will enrich the soil or promote the appearance of mycorhyses, fungi that develop around the roots for better plant development.
Our soils benefit from a complete and exceptional life and it is thanks to these ecosystems and this biodiversity rediscovered that our wines reflect the best of our terroirs.
All our vines in production are cultivated with organic and biocontrol resources.

One objective, to highlight what our plots offer us each year. The wines are aged on lees, then on fine lees before bottling to give them volume, delicacy and complexity.
We do not filter our wines so that they keep all their substance and develop a much better aging potential. Our champagnes benefit from a minimum bottle aging of 2 to 3 years and a year of rest after disgorging in our cellars.
Since 2018, we have been vinifying part of our wines in barrels or without malolactic fermentation for new vintages to come!
This year, our novelty, a Coteau Champenois, the Clos des potiers.
