Selection of Burgundy: Domaine David Duband

The Domaine David Duband lies in Chevannes, in the heart of the Hautes-Côtes de Nuits and produces refined and elegant wines from 23 prestigious appellations from Nuits-Saint-Georges to Gevrey-Chambertin.

The estate farms 17 hectares of vines organically, under the strict management of the Ecocert label. The Domaine Duband also buys grapes from a few small vinegrowers who farm with great respect for the vines and of their surrounding environment.

"Distinctive and elegant wines, with aromas of flowers and spices. Burgundies with finesse and power, delicate and intense!” This is what David Duband hopes for in his wines. In Chevannes, in the heart of the Hautes-Cotes de Nuits, where the winery is located, the talk is not of color nor tannins. The goal is not to intellectualize the wine but rather to obtain wines that are capable of transmitting the complexity of the different "climats” of Burgundy such as Nuits-Saint-Georges, Vosne-Romanée, Chambolle-Musigny, Morey-Saint-Denis or Gevrey-Chambertin...

In the heart of the Hautes Côtes de Nuits, the Domaine Duband vinifies using traditional Burgundian methods. Here, harvest is done entirely by hand and crushing is done by foot. Since 2008, David Duband has emphasized whole cluster fermentation (30 to 40% of clusters are kept whole during maceration in tank) which give the wines of the estate both structure and finesse.

The Duband estate chose to convert entirely to organic agriculture in 2006. David Duband made the choice first and foremost out of respect for the environment but also for the intrinsic quality of the wines. For David, the quality of a wine is comparable of a long chain made up of multiple links. Removing or adding a link changes nothing of the appearance of the chain but its strength depends on it!
