Selection cellar Maison des Millésimes Paris
The family-run Domaine René Bouvier owns 30 hectares of vines (≈ 74 acres), all in the Côte de Nuits. The estate, located in Gevrey-Chambertin, has been managed by Bernard Bouvier since 1992.
The winery produces a range of 26 different wines, ranging from the Bourgogne appellation to the most famous Grand Cru wines: Charmes-Chambertin and Echezeaux. The grapes are entirely harvested by hand, with 23 hectares (≈ 57 acres) producing red wines and 7 hectares (≈ 17 acres) producing white wines, including Marsannay Le Clos, a monopole (a vineyard owned by only one winegrower). The estate vineyards extend from the ancient terroirs (a combination of soil, slope, exposure, climate, and human expertise) of the Dukes of Burgundy, near Dijon, to the well-known wine-producing village of Vosne-Romanée. Most of the climats (vineyard plots in Burgundy) are located in the appellations Marsannay, Fixin, and Gevrey-Chambertin.
For more than 20 years, working the soil while respecting biodiversity has been one of our priorities. For us, respect for microbial life, auxiliary fauna and the quality of plant material (mass selection) are the major levers of our philosophy.
First of all, beautiful grapes are perfectly ripe grapes. Tasting the berries on the vine determines the best harvest date for each plot.
The choice of this date is very important: it will give us 80% of the style of the wine.
Our objective is to obtain perfect maturity in order to have silky and delicate tannins on the reds and to preserve the freshness of the fruit on the whites to maintain energy and balance.
We seek for this, to capture what the grape gives naturally without forcing the potential of the terroir and the vintage. To respond to this philosophy of respect for the vine, we carry out little extraction and work mainly on the infusion, so that the balance and the vibration are gently put in place, day after day during the maceration.

The winery is also known for its depth of vintages and many customers cross Paris (or even more) to come and find some rare vintages for their birthday gifts and / or have fun on old vintages.
