VINIFICATION
Total destemming, maceration for 6 to 7 days at low temperature (8-10 °), fermentation in open vats with pumping over
regular, punching down and load shedding. Vatting for 3 weeks, flexible pressing with selection of juices, aging in vats.
ORIGIN / SOILS
Plot of about thirty years old, exposed on a north-west facing slope at an altitude of 350 m. Clayey-silty soils.
HARVEST / YIELD
Harvesting is done manually at optimum maturity, transport is carried out in low capacity skips so as to limit crushing. Yield of 35hl / ha

The westernmost of the Languedoc appellations
Sheltered from the Pyrenees, the Malepère massif offers a panoramic view of the Lauragais plain, the Razès hills and the medieval city of Carcassonne. Leaving the woods to occupy the heights, the vineyard settles on the clay-limestone slopes and the gravelly terraces which abound around its perimeter.

The western location of the appellation and the proximity of the Pyrenean piedmont allow Atlantic influences to balance the dominant Mediterranean, specific to the Languedoc region. The clay-limestone hillsides which stretch from the southwest, meet the gravel to give excellent terroirs, all in ridges and undulations. The soft, well-drained soils form exceptional terroirs for the vines.

Family Estate since 1928
To the south-west of the appellation rises Alaigne, a small circulade with a hilly landscape. It is here that Philippe and Jean-François, at the beginning of the 2000s, took up the torch of 4 generations of winegrowers ... On the Oceanic side of the appellation, they cultivate about thirty hectares or flourish a diversity of grape varieties expressing all their characters.
