The Bercloux distillery is located in a winery that has existed for 5 generations in the Cognac region. The distillery is the logical continuation of the brewery. During my studies in Niort (between 1995 and 1997), I was lucky enough to have an original teacher. During a few evenings to remake the world by drinking the beers of mass consumption, we decide to buy kits to produce our own beer, make a drink with a little taste, this is the idea of departure. After, it is the classic story of most breweries: I brew, I taste, we taste, we exchange and we re-brew ... in short, I quickly got caught up in the game, my teacher had to go back to other horizons and in 1999, I landed in Ireland to learn on the "job". After a few liters of vaccines à la Guinness, I return to France with the desire to create a brewery on the family farm. I start in May 2000 with milk tanks of 200 liters to produce after 2 years about 150 hectolitres of Bercloise Blonde, Miss white, O'Berness and VIII. So in May 2002, the Brewery of Bercloux invests in equipment with a capacity of 1500 hectolitres / year. This new material is based on a unique concept in the world: the use of the Charentais still to cook beer. In June 2011, a new brewing room and additional fermentation tanks will be operational. The aim is to double production capacity and explore new recipes. In 2014, it's the midlife crisis ;-). It was at this point that the distillery project began with the need to express my vision of simple and authentic work. When we distil, we do not cheat and we work without a net. The choice of the still is a stupfler® made in Bègles. It is a small column still that can produce a wide range of alcohols. The majority of plants come from Plantabeneze in Aumagne (17). The malts come from the malthouse of the Château in Belgium. The fruits will come from the region.
