For 3 years we have started the multiplication of very old varieties of barley and wild barley collected in the surrounding massifs.
We started from a few seeds grown in pot and this year their number is enough to sow them in open ground.
These varieties had not been sown by man since 1932, here they are again in agricultural history. Thierry Ailloud-Perraud from La ferme gabert - who lent us our first land 10 years ago - is in charge today, thanks in particular to the work of Faith who helped us to take care of them so that they multiply naturally.
At The High Ice, cereals are not just commodities, they are at the heart of our approach. It is our raw material. Essential! The more varieties we can grow, the more we can offer you a beautiful and rich palette of tastes.

The 1€ tours mean that they are made free of charge by the distillery. This amount is requested to ensure the seriousness of your request and avoid the winemaker to block a visiting slot unnecessarily.

The Domaine des Hautes Glaces is first of all the story of an encounter, between a place and men, the promise of desires and values to share. The desire to offer with simplicity flavors and sensations, from an exceptional terroir. The desire to connect past, present and future by working with requirement and audacity in the respect of an alchemical, agricultural and natural heritage, that of the master distillers and craftsmen of whisky, that of the peasants of our mountains, that of our children from whom we borrow this land and who will taste adults the fruits of our quest. This is why domaine des Hautes Glaces is one of the few distilleries that grows and processes its own cereals. Probably the smallest and only one of them whose productions are fully certified in organic farming and which uses as the main source of energy, renewable and local energies. The Domaine des Hautes Glaces is located at the Accarias pass, about 900m above sea level, between the Ecrins massif to the east, and the cliffs of the Vercors to the west. Built four centuries ago on the great fault of Belledonne, the Domaine des Hautes Glaces is an old square strong erected at the gates of the Trièves on the border of the crystalline Alps and the limestone Alps. The distillery occupies the upper part of the old barn of the castle. On the ground floor, under the stone vaults, in particular conditions of temperature and hygrometry, are installed the three cellars for breeding whiskeys of the Domaine. The ancillary buildings are reserved for agricultural activity. The lands of the estate extend under the Obiou, and open onto the vast circus of mountains that draws the Trièves. They are bathed in heat, sun and fresh water in the summer, and hit by the icy wind in the winter, before the snow comes to protect them. These are fertile but difficult lands, mountain lands on which our meadows bloom and our cereals flourish. It is in this harsh and preserved environment, at the crossroads of geology, waters and climates that are produced and raised the spirits of the Domaine des Hautes Glaces. See less
