From the AOC Mirabelles de Lorraine to the making of whisky there is only one step! The Grallet-Dupic distillery is the perfect example. With a centuries-old tradition in the manufacture of brandy, the distillery embarked on whisky production 17 years ago. This magnificent family epic, now 5 generations old, has led her to occupy a major place on the French whisky scene. It did not take long for Christophe Dupic and Hubert Grallet – current managers/master distillers – to become masters in the art of assembly; especially thanks to the wise advice of Christian Vergier (renowned consultant in the world of Cognac and more recently Rum). Pioneers at heart and muult of a certain passion for whisky, these two master distillers experiment "all azimuth" in terms of maturation since they use dozens of distinct types of barrels spread over 3 cellars with various properties: an attic, a cellar and an old military fort! The distillery currently operates 300ha of agricultural land, 180 of which is its own. Its annual barley production (Etincel, Esterel and Sebastian varieties) oscillates between 600 and 700T. "France's advantage over other whisky nations is the mastery of its raw materials. These have distinct characteristics depending on the soil. For example, barley grown on heavy clay soil will taste distinct from that grown on sandy ground. That is what we want to highlight. C. Dupic Until now, the distillery had its barley malted at the Malting Plant of Soissons (malted barley peated with 6 – 12 – 20 – 45 ppm phenol). From now on, the maltage will take place at the distillery itself. The investments made will make it possible to start this activity during November 2017, making the distillery one of the few to master its production process from seed to whisky. See less
