Listed among the Premiers Crus Classés of Sauternes, the originality of Château La Tour Blanche is to be owned by the Nouvelle Aquitaine region, due to the fact that historically this property was owned by Mr. Daniel Iffla. The latter having no direct descendants, he then bequeathed his castle to the French State, on the condition that a school of viticulture and winemaking be created on the spot, which is still the case today.
The White Tower has imposed on itself a demanding specification in terms of sustainable development through concrete actions such as the reprocessing of effluents, confined spraying or numerous experiments, especially with regard to the protection of the vineyard carried out according to the methods of organic farming.
During your visit, we will explain to you the whole process of making a Sauternes wine, from the work done in the vineyard, the harvest with the arrival at the cellar of perfectly botrytised grapes, full of sugar and candied at will, which once selected on the sorting table and pressed, will give musts in which the action of the Noble Rot will have produced, at the same time, a decrease in acidity as well as an increase in sugar richness.
Finally, when the desired balance between alcohol and sugar is reached, after about two to three weeks, fermentation is stopped. It is therefore this residual sugar, unfermented, that gives the wine this rich and tasty liqueur.
