Description

The Clos de Caille blanc is made from 100% rolle. The vineyard extends over a clay soil
limestone. It is aged in French oak, 10% of which is new wood. The harvest takes place at night, the vinification
is fragmented. A pellicular maceration is carried out, then a light direct pressing, with
cold stabilization then settling and fermentation at 16°C. The palate is ample and complex, round
on notes of pear and pastry cream. A complex, elegant, long and suave wine in the
tradition of Clos de Caille wines.
