Stéphane Riffault learned to make wine in Beaune and took over the estate from his father Claude.
4 generations of winemakers have succeeded one another at Sury en Vaux. After switching
15 hectares, including 13 ha of white, to organic in 2016, the conversion to biodynamics
the next natural step. Passionate about Sancerre terroir,
influenced by Burgundy's parcel-based winemaking methods, Stéphane Riffault
quality of his wines to the delight of Sancerre lovers.
The vineyard is planted with a majority of Sauvignon Blanc (13 hectares), complemented by
2.3 hectares of Pinot Noir. Soils are grassed and ploughed, and pruning, disbudding and trellising
and trellising are used to limit yields and aerate vegetation. Traditional
vinifications are traditional, and the ageing is precise and demanding.
