Nothing better than to let Florent Georger, technical manager and wine director of Maison Mommessin talk about it: “The cuvée takes its roots on soils composed of very weathered granite. The grapes are vatted in whole bunches and are then vinified for about 15 days. We hardly practice pumping over, just 1 or 2 shedding at the end of alcoholic fermentation. Aging takes place on fine lees for one year. The wine has a very beautiful ruby color with purplish reflections. The nose is delicate and presents aromas of very ripe black fruits. The mouth is full and velvety, offering spicy notes at the end of the mouth. The key words that perfectly describe this cuvée are: partnership with the winegrowers, small volume, work in the winegrower, and granite terroir. I advise you to accompany it with a chicken with cream and morels as well as cheeses.
