Cal Demoura, "It is necessary to stay" in Occitan Symbol of the magnetism of a great terroir Founded in the early 90s, Mas Cal Demoura is one of the pioneering estates that contributed to the qualitative revolution of Languedoc wines. Isabelle & Vincent Goumard have focused their energy since 2004 on interpreting the great terroirs around Jonquières in the heart of the Terrasses du Larzac and making the world of wine discover these magnificent terroirs. Viamo-Mas-Cal-Demoura_74A8620© winebnb.com .jpg The Balance of the Terraces of Larzac Freshness and Generosity The estate is located in Jonquières, about thirty kilometers northwest of Montpellier, in the heart of the Terrasses du Larzac. The generous Mediterranean climate is balanced by the fresh air of the neighboring Larzac. The freshness and acidity are thus preserved and the day-night temperature differences in the ripening period contribute to the construction of a very beautiful aromatic palette. Eleven grape varieties are grown. The objective is to find for each plot the grape variety best suited to express the identity of the terroir in a quest for harmony and balance of wines. DSC_0551.JPG The Energy of the Limestone Terroirs The vine is the keystone of our work The parcel of the estate covers on 16 ha of the terroirs of limestone pebbles and clay-limestone, giving the wines depth and energy. Yields are naturally low (15 to 25 hl/ha). Beyond organic farming, we have for 5 years implemented step by step a biodynamic approach to strengthen the development of biodiversity, soil life and the natural defenses of the vine. The approach is adapted to the specificities of each plot: surface ploughing, organic amendments, controlled grassing, green work (de-budding, careful stripping). Biodynamic preparations (horn dung, silica, herbal teas and decoctions of plants). Development of auxiliary wildlife habitat (hedge planting, nest boxes for bats). The harvest is manual and piecemeal in trays, with a severe sorting of the grapes in the vineyard and then on a sorting table in the cellar. emotion.jpg The Emotion of Dynamic Wines Revealing the magic of our terroir When the grapes arrive in the cellar most of the potential is there. Our role is to accompany, in the most natural way possible, the birth of great elegant, deep and refined terroir wines. Winemaking in parcels all gently, on indigenous yeasts, favoring infusion in order to favor the subtlety of expressions Millimetre breeding, adapted to each grape-terroir pair, in foudres, demi-muids or vats, to give our wines time to grow and find their fullness Blends with subtle balances elaborated by playing on the diversity of terroirs and the complementarity of grape varieties ...
