Domaine de Chevillard is an organic winery of about 10 hectares located in the valley of the Combe de Savoie, at the entrance of the French Alps. Passionate and committed, Matthieu Goury, young winemaker at his head, develops exclusively red and white wines in PDO Wine of Savoy and Roussette de Savoie.

Originally from the hamlet of Chevillard, which today lends its name to the Domaine, Matthieu Goury, 37, from a family of winegrowers, is convinced that great wines can be produced on the steep slopes of limestone marl in layers, typical from the very beautiful terroirs of the Combe de Savoie. Graduated from ISARA and rich in a solid experience in the work of the vineyard and in winemaking acquired on his Savoyard lands, but also in Canada and Australia, he manages, plot after plot, to reconstitute a wine estate from the family lands. Having at heart to restore their letters of nobility to the wines of Savoy while respecting its terroir, since 2016 he has set up an exploitation exclusively in organic and traditional cultivation. THE VINEYARD & THE CELLAR In the vineyard ... In order to fully promote the expression of the terroir in the wines, the cultivation of the vine, the only production of the estate, is here reasoned and respectful of the environment and the life of the soil. Over the seasons, manual work following ancestral techniques (rigorous disbudding, leaf stripping and dishing) is favored in order to control yields and optimize the maturation of the grapes which are then harvested exclusively by hand. In the basement… The winemaking in barrels is then very little interventionist, the objective not being to make the wine but to age it. The simplicity, the accompaniment of the wine during its stages of production (fermentation by indigenous yeasts, manual mechanical pressing for the reds), as well as a moderate use of wood thus allow each cuvée to express itself in an authentic way. and unique.
