Welcome to Kobbegem, a place where wild yeasts abound

Lambic is a unique brew made of malt, cereals and water as well as at least 30% un malted wheat.

To begin with, the malt grains must be crushed so that their contents can come into contact with the water during impasto.

In the material tank, we heat the crushed malt in water. The enzymes thus released are transformed into sugars (and therefore, subsequently, into alcohol and CO2, at the origin of the small bubbles present in beer)

We then filter the maize. The residues (called grains) are a real treat for the cattle, while the liquid part (the wort) is the indispensable basis for our beer.

We cook the wort with several types of hops. This operation allows a better preservation of our beer and gives it a more refined foam neck.

In the cooled wort, the wild yeasts of Pajottenland – brettanomyces for connoisseurs – come into action. They trigger the process of spontaneous fermentation. Of course, Bruno takes care of the grain...

Once the yeasts have stopped fermenting, we transfer the Lambic into barrels for low fermentation. Part of it is put in stainless steel barrels and another part in oak barrels for a period of three years.

After a well-deserved rest period (for the beer, not for the brewer), Bruno the master brewer mixes, tastes and decides what is the ideal combination for each Sudden Death beer.

After a low fermentation in additional barrels, we transfer our matured beer into vats to send it to the bottling workshop.

Then comes the supreme moment: the tasting of a delicious Sudden Death. From a sweet and sweet beer to a beer of acidic character: there is something for everyone. health!

Mort Subite, our little Belgian nugget Taste, character and authenticity: everything is there Mort Subite owes its name to an old game of dic that was played on an octagonal track the pietjesback, in Dutch and was once all the rage in bars and especially in the famous café "La Cour Royale" a stone's throw from the Brussels Stock Exchange. When time ran out (because customers had to go back to work, take the train or go back to eat), we played a shorter version. The die was then cast one and last time to life at death or rather "sudden death". The game became so popular among the regulars of "La Cour Royale" that the boss decided to rename his establishment "A la Mort Subit" and give the same name to his delicious beverage. Sudden Death beer was born. Our beers: under the capsule, the Brussels spirit 2 lambic beers for those curious about new true and authentic flavors And this is Bruno Meet our master brewer Bruno. Meesterbrouwer Bruno Or, officially, Bruno Reinders. Constantly on the lookout for air, temperatures and humidity, he is able to determine the ideal time to expose malt wort to Kobbegem air. He scrupulously chooses the best ingredients, he tastes them, he mixes them... Then he decides.
