Installed on the slopes of the Soufriere since the seventeenth century, the plantation of Bologna knew different types of crops until the mid-nineteenth century when was developed the monoculture of sugar cane on all its plots. This revolution fully revealed the exceptional richness of this volcanic terroir and everyone agreed that the Bologna plantation concentrates on a few dozen hectares the most beautiful terroirs of rum that are, with quite unique potential on the island. Since 1887 the Bologna distillery has been installed on a three-century-old cane plantation that stretches from the slopes of the Soufriere volcano to the shores of the Caribbean Sea. Heir to this long tradition, the Sargenton-Callard family has remained faithful to the craftsmanship of Bologna and has always sought to sublimate the expression of the terroir and the cane, the only guarantees of very high quality. Harvested at their optimal point of maturity, our canes are immediately transported from our plantations to the distillery to be crushed, fermented and distilled: their freshness is total and we thus avoid that they suffer from premature oxidation. We apply a very precise distillation style that aims to concentrate the aromas: Bologna is one of the last distilleries in Guadeloupe to use a copper column, which restores with the greatest fidelity the entire aromatic palette of the cane. La Soufrière watches over our old rums... One of the fundamental characteristics of Bologna rum is its remarkable ability to age. Perpetual challenge to time, it ages by expressing this effect of terroir that makes it more and more complex and subtle. The parcel management of the estate is fully in line with the ability of the terroir to produce over the vintages of great old rums of guard. We breed our rums in oak barrels from France only, for at least 3 years and up to more than ten years ... The proportion of new oak is voluntarily limited so that the wood does not mask the aromatic richness of our rums. The ageing in barrels takes place in the walls of our aging cellars at the distillery, at the foot of the Soufriere volcano. They are thus maintained at a constant humidity and temperature, ideal for rum, which reveals its letters of nobility and affirms its identity so particular over the years. Thus, since 1887, Bologna rum has established itself as a great rum, of a unique style in Guadeloupe, and continues to be so even today. See less
