Description

To create a Cognac, the Cellar Master assembles eaux-de-vie of different ages and vintages. Once he has defined his "cut", he has the assembly carried out in large aluminum tanks. The alcohol level is reduced to 40% vol. by the addition of demineralized water. The Cognac thus made is brought to -5 ° C to allow the possible crystallization of particles. It is then filtered and put to rest for a few months before bottling.

Cognac is a small town located in Charente, in the south-west of France. If the wine tradition of the region dates back more than 2000 years, the first cognacs were produced only at the beginning of the 17th century. Cognac is an appellation d'origine contrôlée (AOC) product and all stages of its development are subject to strict regulations. It is the fruit of the distillation of wine of white grape varieties exclusively, including Ugni Blanc, Colombard and Folle Blanche. The cognac vineyards extend over 75,000 ha divided into 6 crus. Each of them has a different type of soil and is recognized for the specific qualities it confers on grapes, and ultimately on Cognac. The blends of Bache-Gabrielsen cognacs are made mainly with the crus of Grande Champagne, Petite Champagne, Borderies, and Fins Bois. See less
