As an Appellation d'Origine Contrôlée (AOC), Cognac can only be produced within a precisely defined production area. This area was defined by decree on May 1, 1909. The appellations Cognac, Eaux-de-vie de Cognac, Eaux-de-vie des Charentes are exclusively reserved for eaux-de-vie from wines harvested and distilled in the well-defined territories of Charente Maritime, Charente, some communes of Deux-Sèvres and Dordogne.
