Located in the heart of the 6th arrondissement, Chai Saint Olive is Lyon's first winery! Creator of urban wines, Chai Saint Olive is a place of production. From the reception of freshly squeezed grape juices (also known as musts) to bottling, through barrel or vat farming, all the winemaking steps are carried out. All wines are produced from local grape varieties (Chardonnay, Viognier, Gamay and Syrah) carefully selected from 4 estates located less than 60 kilometres from Chai. More than a family and entrepreneurial adventure, Chai Saint Olive is a human adventure punctuated by chance encounters and long dates including those of the winegrowers and winemakers partners of Chai. Local children, lovers of their vineyards and passionate about their craft, these winemakers and winemakers practice a responsible viticulture and respectful of nature and people. It is by following this philosophy that Franck and Grégoire have selected the winemakers of Chai in the Rhône Valley with Jeanne Gaillard in Malleval, and Beaujolais with Jean-Michel - Viviane Tournissoux in Lantignié, Christophe Subrin at Breuil and Hubert Cinquin in Quincié-en-Beaujolais. Chai Saint Olive is also a unique event venue dedicated to tastings, private visits, wine workshops, training, corporate and private events.
