Domaine C.

The DOMAINE OF COLOMBIER is a farm transmitted for five generations extended on 24ha of Cabernet Franc (for reds and rosés) and Chenin (for white), planted on clay-limestone and argilo-silliceux soil. Our vinifications remain traditional and take place at a relatively low temperature of 25oC which develops the fine and fruity aromas of the wine. The rather long wine, from 3 to 4 weeks, gives birth to a tannic wine that possesses the double and exceptional quality of being able to drink young, in real Easter wine, but also to age without wrinkle for many years. After bottling our Chinon is kept in the cellars of tuffeau, vast safe, where these bottles can ripen and refine in peace.
