In 1969, the Gutiérrez-Colosia family bought the ruins of the palace of the Count of Cumbrehermosa-carrier of Indias, who already owned a cellar, and built two more warehouses in its place. The Gutiérrez-Colosia Caves are the only ones that currently face directly the Guadalete River, which gives it a perfect humidity for the biological aging of fine wines under the veil "in bloom" (microorganisms that reproduce on the surface of the wine).
