Description
At Domaine Sauveroy, we practice sustainable and organic viticulture (2nd year of ab conversion on 11 hectares of Chenin in 2020). This approach is guided as much by an ethical concern as by a goal of quality and authenticity of each vintage. The diversity of flora and fauna in our vineyards testifies to their good health. We are proud to participate in the preservation of our terroirs and Angeline biodiversity.
At Sauveroy, we chose to convert part of the domain into
organic farming (the 2022 harvest will be AB certified for all white wines). We practice a viticulture of observation, prevention and listening to the great natural balances. (To be even more precise, we have installed two weather stations in the vineyard). Soil maintenance is biological, carried out by alternating ploughing and controlled natural grassing. For manure, cattle manure and organic fertilizers are preferred. Protection against diseases and pests relies largely on prevention (prophylactic measures). Yields are thus controlled to ensure beautiful healthy grapes. Our wish is to sublimate the extraordinary mosaic of Anjou terroirs through each of our wines
We will be delighted to welcome you for a presentation of our vineyard.
We will explain the work done at the vineyard, then the work done in the winemaking and finally the aging of the wines.

OUR HISTORY Sauveroy Domain Domaine Sauveroy is located in the heart of the Coteaux du Layon in Saint Lambert du Lattay in the Loire Valley. Created in 1866, the estate was bought in 1947 by Francis and Donatienne Cailleau. Very quickly, the Cailleau family transformed Domaine Sauveroy into a vineyard and a reference cellar. They pass this passion on to their five daughters and three sons. Pascal Cailleau, the last of the siblings, took over the Domain in 1984. After studying winemaking near Saumur and then an internship in Burgundy, Pascal organized a stay in the United States where he made his first harvest at Dry Creek Vineyard in the Sonoma Valley, California. His wife Véronique joined the adventure in 1987. From one hectare of vines in 1866, the Sauveroy will increase to 18 hectares in 1984 and 30 hectares today. Always in a reasoned approach, everything is done to optimize the organic balances within the vineyard. Quality is the driving force behind Pascal Cailleau, whether in the approach to growing his vineyard or in the winemaking of his wines produced on his Domaine. See less
