Fontechiara produces high quality Red DOC Colline Novaresi wines such as the famous Nebbiolo and the renowned Vespolina. Since 2014 he has included the Rosato da Nebbiolo, a rosé wine vinified in white and obtained from the Nebbiolo grape. The vineyards are located on the hills at the foot of the Alps with Southeast exposure and an altitude of 350 meters, on slightly acid soil. In the vineyards, where the environment is respected to the utmost and biodiversity encouraged, the vines grow in a living soil, full of worms and bacteria. This allows them to take an optimal level of minerals from the soil which makes them healthier and more disease resistant capable of producing high quality bunches for many years to come. In our vineyards each plant is individually looked after and cared for. During the summer the thinning of the bunches is carried out which decreases the yield of the plants and therefore guarantees a better quality of the remaining bunches. Harvesting is done by hand and every day the bunches are brought to the cellar to be pressed immediately in order to avoid the development of a premature and harmful fermentation. After pressing, the fermentation is monitored day by day with extreme attention to maintain the quality characteristics of the wine. Fontechiara produces only a limited number of bottles per year, which must pass our strict quality control throughout the production process.
