THE HISTORY OF THE CELLAR The vineyard and winery are located in Cernavoda, Constanța, near the Autostrada Soarelui - Cernavoda exit, extending over an area of 50 hectares. VINEYARD An ideal area bathed in the sun of Dobrogea creates a new experience for anyone wishing to visit Rasova Winery. The presence of the sun plays an essential role for the quality of the grapes and the wine and is one of the strong symbols of the cellar. The enormous potential of the terroir is given by its location near the Danube, influenced by a number of factors favorable to the development of a quality vineyard: dry climate, presence of the Danube wind, limestone and sandy soils, dobrogean food chain. : presence of rare plants and animals (land tortoise, partridge, pelican). Visitors can follow the course of the Danube from the sunny cellar terraces, which describe a charming landscape and harmoniously complement the “wine route”. The main grape varieties cultivated in Rasova, with care and passion for quality, are: sauvignon blanc, pinot gris, cabernet, syrah and pinot noir. THE WINE ROUTE Visitors can witness the entire winemaking process, from harvest to fermentation in vats and aging in special barrels. The grapes have reached full maturity and are harvested manually, through a process of qualitative selection of the best grapes, stored in crates of up to 12 kilograms. Once in the cellar, the beans are acclimatized for optimal processing, which is then continued using an Oscillis peeler, the processing being gravitational. For fermentation, the grapes are stored in tanks of different sizes, in order to maintain good control of the berries and to retain all the aromas of the grapes. Maturation is carried out in mainly French oak, as long as the wine evolves, and this process is monitored daily by the experts of the cellar. By using advanced technologies alongside traditional manual processes, we manage to develop an ideal processing system to create the highest quality wine. See less
