Récolte et tri manuel. Foulage- égrappage délicat. Vinification dans des cuves en acier inox munies de pigeurs automatiques et d'anneaux pour réguler la température qui est maintenue à 28- 30°C. Durée de la fermentation et de la macération, environ 20 jours. Le vin de goutte est maintenu au chaud, à 22°C, pour favoriser la FML en barrique.
Sa robe est d’une couleur rubis profond et éclatant.
Le nez expressif et complexe mêle des notes de fruits rouges, encens et senteurs de garrigue méditerranéenne. La bouche concentrée offre une belle fraîcheur accompagnée de notes de poivre et de fruits noirs avec une forte expression aromatique et une belle finesse tannique.
