Description
At the Heresztyn-Mazzini estate, reflection takes precedence over action. Every work undertaken, in the vineyard or in the cellar, is carefully considered. Respectful of the environment of nature, Florence and Simon follow for the moment the principles of reasoned struggle. Both are permanently in the field, in order to follow the evolution of the plant. They make it a point of honor to respect the soil and nature.
Their wines let speak the various climates from which they come. The goal is to obtain the most beautiful raw material possible, grapes, to produce bottles revealing the identity of the estate's wines.
After six winemaking campaigns, they chose the entire harvest on some cuvées, to bring structure to the wine and erase the astringency. After three weeks of vatting, the wines are aged in barrels for a period of 12 to 16 months. The couple attaches great importance to the choice of coopers. Bottling takes place at the estate, taking into account the lunar calendar, so as not to rush the wines and in a concern for continuous quality.
