OUR HISTORY Sauveroy Domain Domaine Sauveroy is located in the heart of the Coteaux du Layon in Saint Lambert du Lattay in the Loire Valley. Created in 1866, the estate was bought in 1947 by Francis and Donatienne Cailleau. Very quickly, the Cailleau family transformed Domaine Sauveroy into a vineyard and a reference cellar. They pass this passion on to their five daughters and three sons. Pascal Cailleau, the last of the siblings, took over the Domain in 1984. After studying winemaking near Saumur and then an internship in Burgundy, Pascal organized a stay in the United States where he made his first harvest at Dry Creek Vineyard in the Sonoma Valley, California. His wife Véronique joined the adventure in 1987. From one hectare of vines in 1866, the Sauveroy will increase to 18 hectares in 1984 and 30 hectares today. Always in a reasoned approach, everything is done to optimize the organic balances within the vineyard. Quality is the driving force behind Pascal Cailleau, whether in the approach to growing his vineyard or in the winemaking of his wines produced on his Domaine.
